Colorado Slow-Roasted Prime Rib (Available aboard First Class Dinner Trains)

Garlic and spice-rubbed prime rib, seared at high heat and slow-roasted to a tender medium-rare. Served with horseradish potato purée, green beans almondine, and red wine demi-glace.

Colorado Buffalo Short Rib (Available aboard First Class Lunch Trains)

Tender braised buffalo short ribs, horseradish potato purée, green beans almondine, and red wine demi-glace.

Rocky Jr. Chicken Breast

Herb-roasted Rocky Jr. chicken breast, smashed fingerling potatoes, sweet caramelized onions, blistered carrots, and natural jus.

Slow-Cooked & Seared King Salmon

Silken King Salmon, gently cooked and delicately seared, served with asparagus and finished with a vibrant ginger-citrus glaze.

Spinach Lasagna

Delicate layers of spinach pasta, roasted butternut squash, creamy ricotta, fresh mozzarella, and Parmigiano Reggiano, finished with a white wine cream sauce.

Curried Purple Cauliflower Steak

Grilled, marinated curried cauliflower with caramelized onions, carrots and asparagus. Piquillo pepper vinaigrette. (Vegan)

Chef’s Dessert

Crème Brûlée

Traditional French style Crème Brûlée with mixed berries and vanilla whipped cream.
